Pinsa is the ancestor of pizza. The term "pinsa" comes from the Latin term “pinserie”, which means “to crush, to grind, to beat”. During the Roman Empire, pinsa was made by the peasants, grinding grains, millet, barley, oats, and farro, adding water and salt and it was given to the gods to get wealth. Rediscovered in modern times, with the use of rice, soy, and wheat flours and with the addition of yeast, the pinsa dough is raised for 72 hours, making it highly digestible.
