What is Macaronology? Derived from “macaron” and the suffix OLOGY meaning study of, science of, and theory of. What could be more perfect for a scientist and a baker? Macaron shells require a delicate blend of a nut flour base and a flavor agent to achieve the classic smooth, shiny domed top and the ruffled bottom referred to as the “foot”. New flavor creations provide a fulfilling combination of art and science.
